Sumario:INTA (National Institute of Agricultural Technology) developed some garlic cultivars differentiated by adaptation and yield in order to improve cultivation time and commercialization. The aim of this work is to bring information about consumers reaction in front of these cultivars. In 2003 and 2005 it was made assays which brought information about pungency intensity of cultivars Fuego, Castaño, Nieve, Unión, Gostoso and Sureño. It was obtained the highest median values of pungency for Fuego, Sureño and Castaño, and the smallest ones for white garlics (Nieve and Unión). The preference of consumers in front of different garlic cultivars were detected with ranking tests. It was observed a marked preference for the those cultivars of higher pungency. The first places were for Sureño and Fuego. Results obtained by consumers segmentation (sex, age and consumption habits) do not mark differentiated trends in relation to general results. Leading tasting is an alternative tool to identify taste and trends of consumers.
