Sumario:Mendoza’s peri-urban agricultural areas are being replaced by urban uses due to the growth of the metropolitan area, putting at risk the supply of fresh food for the province and the country. In this paper, the Potential Food Production Index (IPPA in Spanish) is proposed as an instrument for the zoning and environmental territorial land-use planning of irrigated agricultural areas. This index allows for the valuation of the food production ecosystem service in the Guaymallén’s rural territory. For its calculation, indicators of soil, irrigation water and phreatic danger (salinity and water table levels), characteristics of local biophysical conditions were considered. The results showed that, in general, the department’s conditions are good for food production, southern area has the greatest potential, while in the central and northeast areas the potential is minor. The IPPA indicates those sectors with better conditions for production and those with limitations. It can be integrated along with other indicators for the generation of knowledge that allows decision-making and sustainable management of the territory.
