Sumario: | Food safety regulations tend to generate healthy and safe food that provide bioactivity compounds which contribute to good overall human health. Both concepts, safety and healthy food, at the global level can be voluntary or obligatory systems which include a broad chain of production, transformation, logistics and marketing of food. In field production, the wrong agricultural practices bring loss of innocuousness, contamination with heavy metals and pesticides residues, due to lack of respect deficiency times or used prohibited substances. The use of GAP protocols, field registrations, goverment control, commercial requirements, internal and external audits are ideal mechanisms to protect the general human health. In this framework, the project analyzes six important foods within the agricultural matrix of the Mendoza province (olive oils, tomatoes, potatoes, grapes, edible seeds and beef) in order to leave background information on the current situation.The project is an integration of severall studies that the research team has been carrying out on previous calls. External institutions such as Juan Agustín Maza University, National University of Catamarca, Mendoza Fruit and Vegetable Center (INTI) and Mendoza Conicet CCT, will provide the analytical complexity equipment for the characterization of the raw materials and the new formulations. The elaborations will be carried out in the Experimental Food Plant, of the Agricultural College, University of Cuyo. The analysis includes the use of specific instruments such as gas and liquid phase chromatography, spectrophotometry: UV-visible, atomic absorption and emission by inductively coupled plasma as well as physical, chemical and sensory analysis. The data will be validated statistically with specific software. The project include the formation of Human Resources with doctoral thesis, and thesis of Degree in Bromatology. Once approved the Project, the call for students or scholars will be made. The result transfer will be made in scientific events, training courses and writing extension manuals, wich specific topyc for the different industries related to the new project. |
